i had a couple V-strom 650s they were great bikes. i stopped traveling as much and now have something a little more dirt oriented. DR 650 Suzuki makes a great machine.
Suzuki 800 DE is a very convenient package turn key for hitting the road for days. I guess lots of people use their phone for GPS, so one has to add a dedicated GPS unit if desired. With the USB port on the monitor screen, it should be relatively easy to get a real nice dedicated GPS unit going.
I love my stripped down thumper for any type of riding other than very technical off pavement (personal skills issues? hahahahaha) that it has actually done short of jumping things and going over logs. But, it was frustrating at times to get a 1980s/1990s technology bike up to current standards. I still think my thumper is the best option for me, but, not everyone is into the countless hours of research, sourcing, and fitting the parts to a motorcycle to get it cross country capable and self-supporting in the backcountry.
I'm sure there are a lot of people jealous of your 800 DE cross-country capabilities.
I'm currently on a significantly personalized Honda XR650L that hopefully will be an excellent cross-country and off pavement, unsupported backcountry machine. Maybe in a year or so I will have it much closer to my hopes. All 3 photos are the same bike.
